Schlipfkrapfen - Stuffed Pasta

A traditional dish from Germany, that would make a great pasta course. A nice alternative to the usual pasta dishes, this will make your dinner unique.

2 cups of flour
2 eggs
1 tsp of salt
1 tbsp of oil
4 tbsp of water
2.25 lb of potatoes
2 onions
1 bunch of chives
salt and pepper
Parmesan cheese


Pour the flour and salt into a bowl and mix. Make a well in the center of the flour, and add the two eggs after beating them. Mix everything together until a stiff dough is made. You can add tablespoons of water, or oil, if the dough is too stiff or dry. Boil the potatoes, peel hot and press through a potato press. Then season with chopped onions, chives, butter, and salt. Then mix with 2 - 3 tablespoons of milk. Make dough into a not too thick roll. Chop into pieces and thin them out. Add 1 teaspoonful of potatoes each. Moisten the edges with water and squeeze well. Cook in slightly salted salt water for 8 to 10 minutes. Sprinkle with melted butter, garnished with some chives, and Parmesan cheese.

Cooking Tip

Some of the ingredients such as butter, milk, salt, and pepper can be added according to your taste. Choose a white wine to go with your meal.
