Porto de Galinhas Chicken

This would make a great main course, for a small dinner. Your guest will be impressed.

1 whole chicken about 2-3 lb
1 lemon
3 slices of bacon
1 rosemary branch
4 bay leaves
0.5 cup of vodka
3 medium onions
1 clove of garlic
black pepper


Turn the oven on to 662F. Wash and dry the chicken, and season with salt and pepper inside and out. Put inside the chicken the whole lemon, the slices of bacon, rosemary and bay leaf. Arrange the chicken in a casserole. Drizzle the chicken with vodka. Cut the onion into wedges, and add the onion and the garlic. Bake for 50 min. and baste occasionally with the broth.

Cooking Tip

Watch the water level. Do not let the chicken dry out. Add a red wine to your table such as Merlot.
