Middle East


This is a very well know Middle Eastern recipe. This would make a great appetizer for a meal, or something to snack on for a little get together.

2 cups of cooked chickpeas
2 eggs
1 raw potato
1 onion
2 cloves of garlic
1 tsp of baking power
1 tsp of turmeric
a few branches of parsley


Mash the chickpeas in a bowl. Wash and grate the onion and garlic and add to the bowl. Wash and peel the potato and grate, and add. Add baking powder, turmeric, salt, and pepper. Chop the parsley and add. Beat the two eggs in a bowl and add to the mixture. Mix the whole thing very well by hand. Take out a spoonful of the mixture, and roll into a ball, and fry in a pan with oil.

Falafel Sauce

2 tbsp mango powder
0.50 cup tomato paste
0.25 cup vinegar
black pepper
water as needed


Put all the ingredients into a pan, and bring to a boil. Then simmer and stir.

Cooking Tip

There are very strong flavors, so a bold red wine such as a cabaret sauvignon would be a good idea.
