Enokitake Cold Mushrooms

This would go nicely with green tea, or your favorite white wine.

Ingredients

2 bunches of enokitake mushrooms
2 green onions
1 or 2 dried chili pepper
soy sauce
sugar
salt

Preparation

Wash and chop the green onions. Wash mushrooms and cut at the root. Place the mushrooms into a pot of water to boil for a minute until fully cooked, remove and drain the water. Place mushrooms into a bowl. In a small bowl add two tablespoons of soy sauce, add a little sugar and salt and mix well. Sprinkle the chopped green onions onto the mushrooms. Get the small bowl of soy sauce, and add to the mushrooms. Get a frying pan, and place into it some oil and the dried chili pepper. Fry on low heat, then pour onto the mushrooms.

Cooking Tip

This is a different way to prepare mushrooms, and will be noticed by your guests. It would be a great course as part of your meal.
