Cowpeas Salad

This could be a great vegetable course for your meal or stand on its own as part of a lunch. It is also great for vegetarians.

2 bunches of cowpeas
4 cloves of garlic
4 green onions
4 oz of white sesame seeds
1 or 2 dried chili pepper
sesame seed oil


Clean and cut the cowpeas about 2 inches in size. Wash and chop the garlic, green onions, and dry chili. Boil water in the pot, and put a pinch of salt and oil in the water. Then put in the cowpeas for 3 min and remove. In a frying pan, fry lightly the garlic, green onions, and chili with sesame seed oil. Place the cowpeas on a plate, give a pinch of salt, and pour on the garlic, green onions, and chili with the hot oil. Finally, thrown on the white sesame seeds.

Cooking Tip

If you are not in the mood for spicy food, just leave out the chili pepper. You can also serve this with rice. Try a dry white wine such as Sauvignon Blanc.
